Valentines Treats
I did this little baking project with my 5 and 2 year old yesterday and they could both do it.  Fantastic!  I don't know about you but it is hard to find ways for my 2 year old to help in the kitchen.  There are only 3 ingredients needed . . . square pretzels (made some for myeslf with delicious gluten free pretzels), hersheys hugs, and valentines m&ms.  Place hugs on pretzels, place on baking sheet, and bake at 200 for 3 - 4 minutes.  Then add m&m.  The 2 year old could unwrap hugs, place on pretzels, and place m&ms on top.  If you need an activity today on this chilly day - there you go!  The m&ms are probably at a discount today!  I got this idea off pinterest (of course), and here are pics of my kids making them:




Strawberry Snow Cones

What you need:

1 c boiling water
1 pkg. (6 oz) jello gelatin, any red flavor
1 c pureed strawberries
1/2 c light corn syrup
1/2 c ice cubes
8 cups crushed ice

Make It:
Add boiling water to gelatin mix in large bowl; stir 2 min until completely dissolved.  Add strawberries, corn syrup and ice cubes; stir until ice is completely melted.

Spoon crushed ice into 8 (8 oz) paper or plastic cups.  Spoon gelatin mixture over ice.  Serve immediately.

Another option:
Let the kids make their own holders for the prepared snow cones.  Use markers to decorate shets of construction paper.  Roll up each to form cone shape; secure with staples.  Insert filled paper cups into holders just before serving.

Storage:
If you have more snow cones than kids, wrap filled cups well with plastic wrap; store in freezer up to 3 weeks.  Remove from freezer about 5 minutes before serving.

Bears at the Beach

What you need:

1 pkg. (2 layer size) white cake mix.
2 1/4 c thawed cool whip whipped topping, divided
6 drops blue food coloring
1/2 C honey maid graham cracker crumbs
24 jet puffed funmallows miniature marshmallows
48 teddy grahams graham snacks

Make It:
Prepare cake batter and bake as directed on package for 24 cupcakes.  Cool in pans 15 minutes.  Remove from pans to wire racks; cool completely.

Remove 1 1/4 C cool whip; set aside.  Tint remaining cool whip with food coloring.  Spread top of each cupcake with some of each color cool whip to resemble the ocean and its beach.  Sprinkle 1 tsp graham crumbs over white cool whip on each cupcake for sand.

Insert 1 small cocktail umbrella into marshmallows; insert into each cupcake for the umbrella.  Decorate cupcakes with teddy grahams as shown in photo.  Keep refrigerated.

Triple Strawberry No-Drip Pops

What you need:

2 C boiling water
1 pkg. (3 oz) jello strawberry flavor gelatin
18 fresh strawberries, stemmed
2/3 C (filled to 2 qt line) kool-aid strawberry flavor sugar-sweetened soft drink mix, or any red flavor

Make It:
Add boiling water to gelatin mix; stir 2 min until completely dissolved.  Cut strawberries in half.  Mash berries and drink mix in large bowl with fork.  Stir in gelatin.  Cover cups with foil, insert wooden pop stick into center of each for handle.  Freeze 2 hours or until firm.

Summer Berry Pie

What you need:

3/4 C sugar
3 T cornstarch
1 1/2 C water
1 pkg. (3 oz) jello strawberry flavor gelatin
1 C each:  blueberries, raspberries and sliced strawberries
1 honey maid graham pie crust (6 oz)
1 1/2 C cool whip whipped topping thawed

Make It:
Mix sugar and cornstarch in medium saucepan.  Gradually add water, stirring until well blended.  Bring to boil on medium heat, stirring constantly; boil 1 minute.  Remove from heat.  Add dry gelatin mix; stir until dissolved.  Stir in fruit.  Pour into crust. 

Refrigerate 3 hrs or until firm.  Top with cool whip just before serving.  Store any leftover pie in refrigerator.  (You can also top with ice cream).

Strawberry Nilla Nibbles
What you need:
4 reduced fat nilla wafers
2 T thawed cool whip lite whipped topping
2 fresh strawberries, halved

Make It:
Place wafers on small dessert plate.  Top with cool whip and berries.  Serve immediately.

Aquarium Cups

What you need:
3/4 c boiling water
1 pkg (3 oz) jello Berry Blue Flavor Gelatin
Ice Cubes
1/2 c cold water
1/2 c chopped strawberries
4 bite size fish shaped chewy fish snacks

Make It:
Add boiling water to gelatin in medium bowl; stir 2 min or until completely dissolved.  Add enough ice cubes to cold water to measure 1 1/2 c.  Add to gelatin; stir until slightly thickened.  Remove any unmelted ice.  If gelatin is still thin, refrigerate until slightly thickened.

Place berries in 4 clear plastic cups; cover with gelatin.  Press fruit snacks into gelatin until completely submerged.  Refrigerate 1 hour or until firm.
